When I first heard this version (from the live album "Old Friends") I had to play it back a couple times.
At 2:45 to 4:45, the band launch into a jam that's much more Grateful Dead and not at all Simon and Garfunkel.
Sounds to my ears a bit like someone had been listening to the acoustic 1980 stuff. Or someone's wife (hi Edie!) was subjecting their husband to the Dead yet again and he finally relented.

The Bridge Over Troubled Water album was tremendous, though! It's hardly a "hidden gem", but I love every note on that album. Give it another try!
That instrumental passage from the clip is interesting. I'm sure that there is a GD influence - it reminds me very much of some of the arrangements from April 1971 that are found on the Ladies and Gentlemen set.
